Choconanas!

A current after school snack favorite!

Ingredients:

1 banana sliced

1/4 C. Dark Chocolate Chunks

1tsp. Coconut Oil

1Tbs. Almond Butter

Honey, if desired, to taste

Pink Sea Salt, if desired

Directions:

Heat chocolate, oil and almond butter in microwave for about 30 seconds. Stir until mixture is smooth. Add honey to taste. Drizzle over banana slices. Sprinkle with sea salt if desired.

What I really like about this:

I used to think popcron should only taste one way: from the store bought microwave bags. That’s a sad way to think about popcorn. Lately I’ve been trying lots of flavors (least favorite: cupcake. Happy flavor: vanilla caramel.) My brother in law makes his with lots of butter, parmesean cheese, salt, sugar and nutritional yeast. Nutritional yeast is kind of an awesome flavor. Savory, cheesy almost…delicious and incredible on popcorn. Yesterday, I popped – in a brown paper bag- 1/2 cup of popcorn kernels (which was too much for the bag) see below:

and my cupkeiki and I squealed (literally) with excitement as we discovered the simplicity of making kernel popcorn sans the hot stove and oil and lots of shimming over the burner bit (I detest frying things because one minute things are going great and one second later it’s catastrophe)
It all worked out so well, I made more this morning (new breakfast…snack). Only this time I spiced it up a little with my own taco blend. It’s yummy and I encourage anyone reading to try it.

1/4C. Popcorn kernels
1 medium sized paper bag
1 tbs. Butter, melted
Taco seasoning:
     ~1Tbs. Nutritional yeast (also called
      brewers yeast)
     ~1/4tsp. Of each: ground cumin, chili
     pepper, paprika (smoked), garlic
     powder and onion powder, kosher coarse salt
   
    **blend them up with a morter and
        pestle.
Pop kernels in bag, in microwave set at two minutes, but stopping once kernels slow way down in activity (you don’t want to burn them!! And think of it as popping a bag of store bought microwave popcorn)
In a medium sized bowl, pour pop corn into bowl, drizzle melted butter over, sprinkle with a little sugar (totally optional (about 1/4 to 1/2 tsp), pour over seasoning, stir and enjoy!

I’m sure now that I’ve discovered the wonderful world of paper bag popcorn, I’ll be playing around with different seasonings too!!
