Date Syrup


I like trying new things, when I’m DIYing in the kitchen. Today I wanted to use up some medjool dates that were starting to call out from the cupboard to be used…after months of sitting…

Folks who are looking to avoid refined sugar and are into Paleo and Vegan friendly sweeteners are using dates as snacks and in their baking and cooking recipes. The reason? Dates are naturally occurring, and require no processing. They are high in fiber, potassium and vitamin B6. However, just because dates are a natural alternative, doesn’t mean we should load up on them. The important thing to remind ourselves to do, is limit all sugar in general.

I used 7 medjool dates, pitted
1 C. Hot water
1 tsp fresh lemon juice

I didn’t really let the dates soak, because I’m impatient and also not sure of the purpose. Instead of soaking I put everything in my food processor, and processed for a minute. Then I transferred everything over to a small heavy sauce pan, and heated to a boil over med heat, stirring constantly, for about 5 min, turned off the heat and using an immersion blender; blended it the rest of the way – to a thicker and smooth, less grainy texture. Next time I might just start in the sauce pan and skip the processor altogether.
