These bars, I won’t lie, do a great deal to make you feel energized. Plus they are packed with fiber, antioxidants, protein and a little sweetness. They are no bake and taste too good to be true. Careful you don’t over do it because light on calories they are not! Store them in the fridge or freezer, and make small 1×1 squares…to prevent feeling overloaded on the calories.
11/2 C. Rolled Oats
1/4 C. Flax Seed/powder
1/8 C. Chia Seed
1/4 C. Sunflower Seeds
1/8 C. Pumpkin Seeds
1/2 C. Cashews
1/2C. Almonds (I used slivered)
1/2 C. Agave
1 C. Peanut Butter or another type of
Nut Butter (I used half peanut/half
1/2 C. Chocolate Chips
1/4 C. Chopped, dried, cranberries
1/2 tsp. Cinnamon
Combine all dry ingredients. Add agave and coat well. Mix in peanut butter and combine well. In an 8×8 inch pan lined with parchment paper (make sure you allow the parchment to extend the sides of the pan) spread out and press mixture evenly. Allow mixture to set up for at least an hour and remove mixture from pan, using the excess parchment as handles. Cut bars into desired size (I do recommend 1×1 squares). Cut the parchment paper into squares large enough to cover bars individually and stack bars and store in fridge.
You really can’t go wrong with homemade anything, but homemade energy bars sort of take the cake, given they are so expensive to buy on a regular basis.
