Mmmmm Almond Butter


My sister-in-law and I have been on a “no refined sugars” diet. It takes a lot more dedication than one might imagine, considering the plethora of foods containing refined sugar. We’ve switched our morning tea sugar to agave. We’ve dropped bananas, soda, jellies and jams. Our carbohydrate sources are comprised of whole wheats and sprouted grains. We are making positive changes in the way we eat with great results!

This morning I decided to make almond butter. My sister-in-law bought some almond butter and we like it a lot, but I knew I wanted to try and make it too. I searched for a base recipe and found a good one at:

It’s surprisingly simple to make. I used 2 cups raw almonds. Roasted them for 6 minutes at 375 degrees. Let them cool for a few minutes then put them into the food processor and processed for about 10minutes before I added 2 tsp. organic coconut oil. Processed all that for about 5 more minutes and then put into an air tight container! That’s it. I of course tried a little just to test it (I’m always skeptical of my own cooking) and it tastes great!
