Sometimes a CSA share comes with, as silly as it sounds, more than you’re prepared to use. For example, beet greens. They are delicious but can be a little daunting at the same time. In our house, the solution is, deliciously, juicing.

The base method is: 1 head of Romain, 1 Lemon, 3 Apples. Today we used 4 beets and 3 bunches of beet greens. It was really delicious, although my cupkeiki would argue against that. She wanted nothing to do with it after just a little sip.


we found it interesting that the romain juice seemed to surround the ice cube, separating itself from the beets.
