I love when mornings start out with fresh baked goodness! My morning rendezvous with the oven involved peaches, ginger, cinnamon and a muffin tin. Just writing those three ingredients out makes my mouth water. I love to bake and have found in the past that a good muffin mix is hard to come by. Some are too sweet, some not moist enough. This recipe worked well and will become my go-to mix for future muffin concoctions!
The recipe:
Ingredients:
1 1/4 cups all purpose flour (organic, unbleached)
1 tsp. baking powder
1/4 tsp salt
1 ripe peach (I used an organic peach from our Grant Family Farms CSA), skin removed and diced up
1 Tbs grated fresh ginger
3/4 cups sugar (I also used organic unrefined sugar which lends a very nice taste to baked goods!)
1 large egg (also organic! Just thought I’d point that out as well)
1 Tbs vanilla
1/2 cup butter (unsalted) melted
The Process:
Preheat oven to 375 degrees. Line a muffin tin with liners. Mix flour, salt, and baking powder together in small bowl. In large bowl whisk together peaches, ginger, vanilla, butter, sugar and egg until well combined, then fold in flour mixture until moistened. Divide batter into muffin tin and bake until puffed and golden, about 20-25 minutes. Cool and enjoy!
